Description  : A semifluid viscid liquid, brownish yellow or dark brown, translucent, odour aromatic. Soluble in 90% ethanol, carbon disulfide, chloroform or acetic acid, slightly soluble in ether.Acid value: 52 - 76 (Appendix 1X N)Saponification: 160 - 190 (Appendix 1X N)

Identification  : Mix 1 g with 3g of finely powdered sand, add 5 ml of potassium permanganate TS and warm gently, a distinct odour of benzaldehyde is produced.Assay: Weigh accurately 1.25g in a flask, add 25 ml of freshly prepared ethanolic potassium hydroxide VS (0..5 mol/L) and heat under reflux on a water bath for 1 hour. Evaporate the ethanol quickly at a low temperature and disperse the residue in 50 ml of hot water. Allow the mixture to cool. Filter and wash the residue with 20 ml of water. Acidify the combined filtrate and washings hydrochloric acid and extract with 4 quantities, each of 40 ml of ether. Extract the combined ether extracts successively with 20, 20, 10, 10, and 10 ml of sodium bicarbonate solution (1Õ20) and wash each aqueous extract with hydrochloric acid and extract successively with 30, 20, 20, 10 ml of chloroform. Filter each chloroform extract through a layer of anhydrous sodium sulfate supported by an absorbent cotton plug. Evaporate the combined filtrates to about 10 ml and remove the remainder solvent with a current of air. Dissolve the residue in 10 ml of ethanol with the aid of a gentle heat previously neutralized to phenol re IS. Allow to cool, add 2 - 3 drops of phenol red IS and titrate the sodium hydroxide (0.1 mol/L) VS. Each ml of sodium hydroxide (0.1 mol/L)VS is equivalent to 14.82 mg of C9H8O2. It contains not less than 28.5% of total balsamic acid, calculated as cinnamic acid C9H8O2.
